Fly away with the green fairy

It would be an understatement to say this bar was unusual, and a damned shame if Sydney doesn’t recognize this as a much needed ingredient in the small bar revolution.

There are small bars, there are themed bars, but there has never been a bar solely dedicated to one drink. Let alone Absinthe. Cue Absinthe Salon, your friendly green fairy neighbourhood friend.

Even if you’re not a fan of Absinthe, or haven’t tried it before, this bar is a must visit, just for the experience. To ensure an interesting night, you have to book a table to drink here...even if you’re only allowed three pourings (which is all you need).

Ring the bell and wait to get buzzed into something sensational. Owners Gaye Valttila and Joop van Heusden are amazing people, greeting you with a smile, generous hospitality and great knowledge of Absinthe and the art of drinking it.

Sit in a beautiful room at a table with an Absinthe ‘fountain’ in the middle and choose amongst the 22 (soon to b 25) bottles of choice. Each one has a distinct flavour so either close your eyes and point or let Gaye or Joop assist you in your choice. Once chosen, you place a sugar cube on your spoon held above your glass and slowly turn the Absinthe fountain tap on to delicately drizzle water on the sugar which dissolves in the Absinthe, changing its colour and flavour.

Sydney’s only Absinthe-bar is less than a year old, but has already made an impression in the small bar arena. It’s different, fun and not to be missed, so come fly away with this gorgeous fairy.
