If you haven’t yet experienced the innovative, product-of-the-time restaurant/bar Greenhouse perched on top of Sydney’s Overseas Passenger Terminal, then do it now and do it quick; as its last days are rapidly approaching. Sydney has completely embraced Joost Bakker’s holistically sustainable establishment Greenhouse and lucky for us, it’ll be back soon for a permanent residency (location not yet confirmed).
Bakker has made every part of this restaurant and bar environmentally friendly, proving that being sustainable can be enjoyable and experimental. Greenhouse embodies eco-innovation, with its entire structure being built from recycled-steel, being uplifted by a multiplicity of small strawberry plants, a compost-fed rooftop garden and tables constructed from old billboards. You won’t find anything that can’t be composted in this place - even the cutlery is turned into compost or worm food, the cycle moving from the restaurant itself, to the rooftop garden and back again.
Furthermore, everything that is served, even every drop of liquid that is poured from a bottle is locally sourced; all Australian produce and nothing (and I mean nothing) is wasted. It’s a greenie’s paradise. And given the stunning view of the Harbour and Opera House, it's a paradise that Sydney has fallen head over heels for.
Out of its international destinations, such as Milan, Berlin, London and Budapest, and its national spots including Perth and Melbourne, Bakker points out that Sydney has been the most responsive, supportive and in love with this green pop-up delight.
So even if you're not a recycling type and you enjoy mixing up plastic, glass and paper in your bins, Greenhouse is still an amazing establishment to experience at least once, and as it's only here until the end of March (but back again soon after) you'll be sad to miss its hit of a debut in its beautiful location.
